配合圣诞节做的 Christmas Fruit Cake 真的这么容易吗?
之前和Olivia 老师 (FB : Cook With Olivia) 做了直播 教了大家做圣诞节蛋糕, 由于其中一个Christmas Fruit Cake我觉得不难也很好吃, 所以就尝试做了。 而且这一次我做好了以后, 就拿给我的好朋友们试试, 到底 Leslie蔡河立, Aenie王淑君, Josheen, Selina 和 Jet 对我第一次做的 Christmas Cake 评价如何呢? 请把影片看完。
我是参考Olivia老师的Recipe来做的, 我也自己加了一些Nuts 和 橙皮调味, 做出来的Christmas Fruit Cake 我还蛮满意的, 而且用 Thermomix TM 6 来制作, 真的事半功倍, 简单方便得多啦!
Olivia老师的 “圣诞水果蛋糕” 食谱分享 (FB : Cook With Olivia)
Christmas Fruit Cake
• 600g dried mixed fruits (black raisins, golden raisins, cranberries, currant, cherries)
• 280g self raising flour
• 1 tsp baking powder
• 620g milk
1. Soak dried fruits in milk for at least 4-6 hours
2. Pre heat oven to 150C. Line a 25 cm (9 inches) round cake tin with baking paper and set aside.
3. Place dried fruit and milk mixture, baking powder and flour into mixing bowl and mix 1 min Reverse Speed 3.
4. Pour into prepared tin and bake for 1 hour 10 minutes or until skewer comes out clean.

🔴MY REVIEW: Great keyboard case with trackpad. The typing experience was really nice and even have backlit for the keyboard. It protects the device well and the keyboard is pure bliss to use. The Apple Pencil holding works well enough. The weight is about the same as the tablet. This has not been an issue for me though. It definitely makes for a very light laptop. Overall, I’m really enjoying using this case. The keyboard is easy to use and has a magnet that grabs my iPad Pro and really holds it in place. This case is fabulous for my purposes as a digital content creator. All in all I have zero complaints. This case is also cheaper than Apple’s versions. If you want a case that is the same quality as Apple’s keyboards but cheaper than I definitely recommend Logitech’s.

サマープディング
8人分
材料:
ラズベリー 2カップ(250g) +飾り用
ブラックベリー 2カップ(300g) +飾り用
ブルーベリー 2カップ(400g) +飾り用
砂糖 1カップ(200 g)
食パン 20枚
ホイップクリーム 2カップ(100 g), 軽く甘みをつける
ミントの葉(飾り用)
作り方:
1.ラズベリー、ブラックベリー、ブルーベリーと、砂糖を中火にかけた中くらいの鍋に入れる。果実が柔らかくなり、砂糖が溶けるまで時々混ぜながら、8-10分火にかける(果実の形が崩れるほどは煮込まない)。 鍋を火から下ろす。
2.計量カップの上に目の細かいフルイをセットし(1)を濾す。漉した果汁が360mlに満たなければ、水を足す。その果汁を浅い皿に移す。漉した果汁も、果実も取っておく。
3.食パンの耳を切り取り、縦半分に切る。
4.ボウルに、フチから10cm以上余分が出るように、ラップを敷き詰める。
5.(3)の食パンを(2)の果汁に浸して、ラップを貼ったボウルに少し重ねながら敷き詰めていく。いくつかはボウルのフチからはみ出てもかまわない。側面に敷き終わったら、ボウルの真ん中にもパンを敷き詰める。
6.(2)で取っておいた果実を、スプーンでパンを敷き詰めたボウルの真ん中に入れる。ボウルのフチからはみ出させておいたパンを畳んで、果実の上にかぶせる。さらに、果汁に浸したパンで上部の真ん中も、少し重ねながら覆う。残った果汁を上から全体にかける。
7.(6)をラップで包む。小さな皿を上に置き、その上から缶を重しとして乗せる。冷蔵庫で6時間以上から一晩程度冷やす。
8.サーブする準備ができたら、乗せておいた皿と缶を外し、ラップをめくる。大皿の上に素早くプディングの入ったボウルをひっくり返す。ボウルとラップを外す。
9.プディングの上にホイップクリームとベリー、ミントの葉を飾る。
10.切り分けて、完成!
Summer Pudding
for 8 servings
Ingredients:
2 cups raspberry(250 g), plus more for garnish
2 cups blackberry(300 g), plus more for garnish
2 cups blueberry(400 g), plus more for garnish
1 cup sugar(200 g)
20 white breads
2 cups whipped cream(100 g), lightly sweetened
fresh mint, for garnish
Preparation:
1.Add the raspberries, blackberries, blueberries, and sugar to a medium saucepan over medium heat. Cook for 8-10 minutes, stirring occasionally, until the berries have softened but are still mostly intact and the sugar just dissolves. Remove the pan from the heat.
2.Strain the berries through a fine-mesh sieve set over a liquid measuring cup. Add water as needed so you have 1½ cups (360 ml) of liquid total. Pour the liquid into a shallow dish. Reserve the fruit and the liquid.
3.Trim the crusts off the bread. Cut the bread in half down the middle.
4.Line a 2-quart bowl with enough plastic wrap to hang over the edges at least 4 inches (10 cm) all around.
5.Dip a half slice of bread at a time in the reserved berry juice, then line the sides of the wrapped bowl, overlapping slightly. Some slices can hang over the side of the bowl. Line the center of the bowl once the sides are covered.
6.Spoon the reserved berries into the center of the lined bowl. Fold the bread over the berries, then dip the remaining bread in the berry juice and cover the center, overlapping slightly. Pour any remaining juice over the pudding.
7.Cover the pudding with the plastic wrap. Place a small plate on top and weigh down with a can. Refrigerate for at least 6 hours, up to overnight.
8.When ready to serve, remove the plate and the can and peel back the plastic. Place a serving platter over the bowl and quickly flip both the bowl and platter over to invert the pudding. Remove the bowl and plastic wrap.
9.Top the pudding with the whipped cream, more berries, and fresh mint leaves. Slice and serve.
10.Enjoy!

カスタードたっぷり♪発酵いらずのクリームパン
6個分
材料:
■パン生地
ホットケーキミックス 200g
ヨーグルト 70g
卵 1個
薄力粉(打ち粉用) 適量
■カスタードクリーム
牛乳(室温に戻しておく) 200ml
卵黄 2個
砂糖 大さじ2
薄力粉 大さじ2
バニラエッセンス 数滴
溶き卵 適量
作り方:
1.カスタードクリームを作る。ボウルに卵黄、砂糖を入れてすり混ぜ、薄力粉をふるい入れて混ぜる。牛乳、バニラエッセンスを加えて混ぜる。ふんわりとラップをかけて500Wの電子レンジで3分加熱する(1分ごとに取り出してよく混ぜる)。表面にぴったりとラップをし、冷蔵庫で冷やす。
2.パン生地を作る。ボウルにヨーグルトと卵を入れて泡立て器で滑らかになるまで混ぜ、ホットケーキミックスを加えて粉気がなくなるまで混ぜてひとまとめにする。
3.台に打ち粉を振って(2)を6等分に切り分け、直径10cmほどに伸ばし、中心にカスタードを乗せて包む。
4.天板に(3)を並べて溶き卵を塗り、180℃のオーブンで20〜25分焼いたら、完成!

Custard Cream Bread
Servings: 6
INGREDIENTS
Custard Cream
2 large egg yolks
2 tablespoons sugar
2 tablespoons flour
200 milliliters milk
¼ teaspoon vanilla extract
Bread Dough
70 grams plain yogurt
1 large egg
200 grams pancake mix
Flour, for dusting
Beaten egg, for brushing
PREPARATION
Preheat the oven to 350˚F (180˚C). Line a baking sheet with parchment paper.
Make the custard cream: In a medium microwave-safe bowl, whisk together the egg yolks and sugar. Sift in the flour and whisk to incorporate. Add the milk and vanilla and whisk to combine.
Microwave the custard at 500W for 3 minutes, stirring after each minute, until thick and very smooth. Cover with plastic wrap, pressing the wrap onto the surface of the custard to prevent a skin from forming. Chill in the refrigerator for 1 hour.
Make the bread dough: In a medium bowl, whisk together the yogurt and egg. Add pancake mix and fold with a rubber spatula to incorporate.
Dust a clean work surface with a generous amount of flour. Transfer the dough to the surface and top with more flour. Cut the dough into 6 equal portions.
Flatten each portion in your palm to about 4 inches in diameter. Add a dollop of custard to the center, wrap the dough around it to encase it completely, and roll into a ball. Set on the prepared baking sheet. Brush the tops with beaten egg.
Bake for 20-25 minutes, until golden brown.
